Your Guide to a Galentine’s #SWAPLUCK

Leslie Knope said it best “We need to remember what’s important in life: friends, waffles, work. Or waffles, friends, work. Doesn’t matter, but work is third.” so let’s ignore work and focus on the waffles and friends. Galentine’s day is, to me, about giving friendships as much love and appreciation as the other long-term relationships in your life!

This year I am celebrating with a #swapluck; I keep hashtagging it because I want to make this a trend, that’s how it works right?


Steps for a successful #swapluck

  1. Phone some friends and see who's down!

  2. Assign parts of the meal: main, sides, dessert, drinks! You can go as simple as one person makes dinner and the other dessert or divvy up a four-course meal. You do you!

  3. Do a quick check on allergies and dietary restrictions

  4. Arrange a time to swap outside or through porch drops, just keep it socially distanced, and remember to mask up!

  5. Pick a movie to watch together and keep the group chat open, but feel free to ditch the zoom link.

Dinner

 The main event! This part is the most fun, and possibly the trickiest. I think with dinner for the #swapluck you just have to accept there will be some reheating required! But don’t worry, these picks will be fantastic even after a two minute trip in the microwave! Also, all of these come from one of my favorites, Kelly from  @diningbykelly . She is a treasure      stir-fried pork and bok choy udon noodles      Noodles are always good, period. These will still be delicious when your friend(s) inevitably slirp a few lukewarm silky noodles over their stove while they think about how long to microwave them for.         beef bulgogi lettuce wraps      It comes with its own sauce - so you know I’m sold! Just pack the lettuce separately (maybe wrap them in a damp paper towel before putting them in a plastic back or Tupperware to keep them crisp). Also if you’re want to round this out a little more, make some rice on the side!        red wine braised shortribs      wooo-eee this is a fan favorite. I love braised meats. This reheats well because the meat is already so tender and, if done right, smothered in sauce. Serve these with some mashed potatoes or maybe my  miso polenta ?!      All of these are fun options, you really can’t go wrong here. I would just avoid anything for dinner that is fried or crispy because the second you pack it up, it’ll start to steam and get soft. No one needs a flaccid #swapluck.

Abena’s recs      Blood orange olive oil cake      “This is just great to have on hand and it super easy to transport. For an extra oomph definitely make the compote. That you can (also) put on toast or yogurt“ - Abena        Red velvet cookies with white chocolate chunk      Sasha’s recs       Valentine’s day cookie bars      “People really get a kick out of this one” - Sasha         Fresh Strawberry Poundcake      The great thing about all of these desserts is that they are easy to pack up and travel well! No fussy frosting to deal with. All of these can be tossed in a bag or wrapped up and be good to go - like you really don’t have to do much (other than make it).  Also, they’re all easy to double…you know…just in case you need a little extra laying around.
