They’re simple, affordable, and incredibly satisfying when cooked correctly and the air fryer makes that part nearly foolproof. The steady, consistent heat is ideal for pork chops, helping this lean cut cook through without drying out.

The flavor here comes from a minimalist but deeply effective dry rub made with smoked paprika, cumin, brown sugar, and salt. The brown sugar encourages quick caramelization, while the smoked paprika brings that familiar, barbecue-adjacent smokiness without needing a grill. After a short rest in the fridge to let the rub do its work, the pork chops go straight into the air fryer, where the fat cap renders and the exterior develops a glossy, savory crust. Ingredients

  • 2 bone-in pork chops 1½–2 inches thick
  • 2 tablespoons dark brown sugar
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • 1 teaspoon Diamond Crystal kosher salt

Instructions

  • Place a wire rack over a rimmed baking sheet. Pat the pork chops dry and arrange them on the rack.
  • In a small bowl, combine the brown sugar, smoked paprika, cumin, and kosher salt.
  • Coat the pork chops evenly with the dry rub, pressing it onto all sides.
  • Return the pork chops to the wire rack and refrigerate, uncovered, for at least 30 minutes or up to 12 hours.
  • Preheat the air fryer to 375°F. Remove the pork chops from the refrigerator and let them come to room temperature for about 10 minutes.
  • Place the pork chops in the air fryer basket and cook for 15 minutes, flipping halfway through, until cooked through and caramelized on the outside.
  • Remove the pork chops from the air fryer and let them rest for at least 5 minutes before serving.

Notes

You can prep the pork chops with the dry rub up to 12 hours in advance, as long as they’re kept uncovered in the refrigerator.
