SLOW ROASTED DIJON SALMON

 Salsa Macha inspired chicken tacos

INGREDIENTS

  • 1 (3-pound) salmon fillet, skin on

  • 4 garlic cloves, grated

  • ¼ cup fresh parsley, minced

  • 1 tablespoon Dijon mustard

  • ½ teaspoon kosher salt

  • 2 tablespoons olive oil

INSTRUCTIONS

  1. Preheat the oven to 325°F. Line a baking sheet with parchment paper.

  2. Place the salmon, skin side down, on the prepared sheet.

  3. In a small bowl, combine the garlic, parsley, Dijon mustard, salt, and olive oil to form a thick paste.

  4. Spread the paste evenly over the salmon.

  5. Roast for 20 minutes, until the salmon flakes easily with a fork but is still tender and moist in the center.

  6. Serve warm, garnished with extra parsley if desired.
