Ingredients

Hot Honey Saltines

  • 2 sleeves saltine crackers
  • ½ cup unsalted butter
  • ½ cup vegetable oil
  • ½ cup honey
  • 2 teaspoons red pepper flakes

Whipped Goat Cheese

  • 10 oz goat cheese room temperature
  • 2 oz cream cheese room temperature
  • Pinch of salt

Instructions

Hot Honey Saltines

  • Preheat the oven to 300°F.
  • In a saucepan over medium heat, melt the butter. Stir in the vegetable oil, honey, and red pepper flakes. Cook for 1 minute, until combined and fragrant.
  • Place the saltines in a large mixing bowl. Pour the hot honey mixture over the crackers and toss gently but thoroughly until evenly coated.
  • Lay the saltines in a single layer on a rimmed baking sheet. (you might need 2 baking sheets)
  • Bake for 20–25 minutes, until golden brown and candied but not burnt. Remove from the oven and let cool completely.

Whipped Goat Cheese

  • In a mixing bowl or stand mixer, whip the goat cheese, cream cheese, and salt until light, fluffy, and doubled in volume, about 3–4 minutes.

To Serve

  • Serve the cooled hot honey saltines on a platter with the whipped goat cheese for dipping.

Notes

Storage: Crackers can be made up to 1 week in advance. Cool completely, then store in an airtight container at room temperature.

  1. I made these for a housewarming party and they were the hit of the night! I plan to make them for upcoming holiday parties! Thanks me for the great recipe.

    Side note : I found that I had enough of the butter/honey mixture to cover 2.5-3 sleeves of crackers.

  2. Half of these ended up glued to the pan. The other half broke trying to get the off. Flavor wasn’t really worth the effort and clean up.

  3. Used 1/4 less of the oil and butter each. Swapped w unsalted oyster crackers…. Added seasoned salt, garlic & onion powder and lemon zest. Baked on parchment paper lined cookie sheets. Very good !!

    I didn’t have the patience to shingle them so tried to spread them out as best I could. Baked up nicely but as soon as they were cool enough to touch, I started moving the single layer on cooking racks. And immediately soak your cookie sheet!! That honey will harden like concrete!

  6. Yum! I made these with a few adjustments. I put the saltines flat, not shingled, on a parchment lined baking sheet. 2 sleeves of crackers fit perfectly on 2 large baking sheets. 2 sleeves was the perfect amount for the butter mixture. They cooked beautifully without sticking to each other or to the pan. I can't imagine how you could layer these without them sticking to each other?

    I also left out the cream cheese because I didn't want that much tang and heaviness added to already-tangy goat cheese. Instead I added about 1/3 C ricotta to add some airiness. I also added about a tablespoon of honey to the goat cheese since it was unflavored. I may add some fresh rosemary next time, too.

    Overall a simple and delicious app that I will make again.
