Store-bought is Fine Sundae

This recipe exists for one very specific reason: dessert should not always require effort. Sometimes the move is buying good ingredients, doing almost nothing to them, and calling it a day.

Vanilla ice cream is the base because it gives everything else room to show off. The cherries are non-negotiable — Fabbri amarena cherries are syrupy, bittersweet, and feel instantly special without you having to do anything. Olive oil sounds unexpected until you try it; it adds a subtle richness that rounds everything out. And the salt is what makes the whole thing make sense, pulling the sweet and bitter together into something that tastes intentional rather than lazy.

This is the dessert I make when people are over and I want something fun but low-pressure, or when I’m cooking a bigger meal and refuse to add another project to the list. It’s unfussy, flexible, and proof that “store-bought” and “great” are not opposites.

Ingredients

  • 2 pints good-quality vanilla ice cream
  • 1 jar Fabbri amarena cherries
  • Extra-virgin olive oil for serving
  • Flaky salt for serving

Instructions

  • Set out the ice cream for a few minutes to soften slightly.
  • Scoop 2–3 generous scoops of ice cream into each serving dish.
  • Top with a few amarena cherries.
  • Finish with a drizzle of olive oil and a small pinch of flaky salt.
  • Serve immediately.

  • Go light on the olive oil; you want richness, not grease.
