Citrus Marinated Olives

Ingredients

olives
drained (preferably Castelvetrano)

cup
reserved olive brine
1
orange
juiced and zested
1
lemon
juiced and zested

sprigs fresh thyme

teaspoon
freshly ground black pepper

tablespoons
extra-virgin olive oil
Instructions
In a large bowl, combine the olives, reserved olive brine, orange juice and zest, lemon juice and zest, thyme, black pepper, and olive oil.
Toss well to evenly coat the olives.
Cover and refrigerate for at least 30 minutes to allow the flavors to develop.
Serve chilled or at room temperature.
Notes
Make Ahead / Storage:
Store refrigerated in an airtight container for up to 5–7 days. Bring to room temperature before serving.
